Breakfast foods are my jam and I could eat pancakes on the daily! Who doesn’t love a stack of warm, fluffy pancakes topped with some butter, syrup, and a side of fresh fruit? These 3-Ingredient Banana Pancakes are super quick and easy to make. They’re filling, nutritious, and can be made in a few batches at a time for a great meal prep breakfast. All you need is one banana, two eggs, and a quarter teaspoon of baking powder. If you need to make them in batches for meal prep, just double or triple the recipe and you’re all set.

Not only are these pancakes delicious but they’re also really good for you. Using bananas as part of your base is a great substitute for flour as they are high in nutrients and fiber and low in calories. I find that bananas are filling and will keep me satiated for hours at a time. On top of that, they’re a great source of antioxidants and vitamins.

I’ve been trying to eat more whole foods lately rather than processed convenience type foods and these have been my go to breakfast or pre-workout meal. Since it’s my busiest time of the year, meal prep is key for me. These pancakes can easily be reheated in the microwave. Just add a drizzle of syrup on top and you’re good to go. You can top them with fresh fruit or some peanut butter.

Ingredients
1 banana
1 large egg
1/4th cup oat flour
1/4th tsp baking powder (optional)
Instructions
- Blend all ingredients together until smooth
- Heat a non-stick pan over low to medium heat and coat with cooking spray
- Pour batter into pan and cook approximately 2 minutes per side, or until the base is a golden brown
- Repeat steps 2 & 3 until batter is finished
- Add fresh fruit or maple syrup and enjoy!
