One of my favorite things about shrimp, besides the fact that they are delicious, is that they take almost no time to cook. This is one of my favorite ways to have them because it’s three of my favorite flavors all rolled up into one. I’ll typically leave them marinating in these flavors in the morning and throw them on the pan when we are ready to eat. You can’t go wrong with this BBQ Garlic Pineapple Shrimp recipe!

BBQ and Pineapple Flavors
I love the low calorie options that I’ve been seeing in grocery stores lately. I’m usually up for trying any no sugar added items and although not all of them are good, I have found some great ones. One of my favorite BBQ sauces is by G Hughes and I typically go for the Hickory or Original flavor. I just like the smokey taste usually over the sweeter versions they have available. Adding the pineapple flavor to these shrimp just make everything pop! Now throw in some garlic and we are good to go.

Reducing Food Waste
I typically don’t use an entire can of pineapple whenever I use it in a recipe so I like to buy the NSA fruit cups and will use one or two of those. For this recipe I used the NSA pineapple cups made by Dole. This is a great way to eliminate any waste. I do the same thing with unsweetened applesauce when I use it for baking or any recipes. Most recipes call for a small amount to opening an entire jar just doesn’t make any sense. Mini fruit cups are a great option and are easy to find in the grocery store. What’s even better is that most companies have a no sugar added option as well. Fruit is already naturally sweet on it’s own for the most part so we can do without any added sugar.

This recipe is simple, easy to prep in advance, and takes about 10 minutes from start to finish. I will usually prep the sides first, get those going, and once they are almost ready, then I throw the shrimp on the pan.

BBQ Garlic Pineapple Shrimp

Ingredients
1 lb medium to large shrimp, (peeled, deveined, tails removed)
1/4th cup G Hughes BBQ Sauce (any flavor)
1 NSA Pineapple Fruit Cup
1 tbsp garlic, minced
1 tbsp I Can’t Believe It’s Not Butter Light (or your butter of choice)
Salt & Pepper to taste
Instructions
- Marinate the shrimp in BBQ sauce, juice (do not add the pineapple bits) from the fruit cup, and garlic. This can be done the night before or morning of to allow the flavors to marinate
- Heat butter in skillet over medium heat and add the shrimp with the marinade, allow to cook approximately 2 minutes or until they are opaque
- Flip shrimp to allow the other side to cook and add the pineapple pieces
- Cook another 2 minutes or until shrimp are completely cooked through
- Serve and enjoy
Notes
This can be made with the BBQ sauce of choice and you can also add any additional spices. You can always add another pineapple cup to the recipe if you’d like more of it.
