I’m always looking to bulk up my meatballs and make them as flavorful and delicious as possible. I’ll often take whatever I have in the fridge and throw it into the mix. My Mom used to do something similar with a rice dish. It seems she’s not the only one that does this. Check out this awesome fried rice from All Recipes! This week we had a ton of broccoli and some left over sun-dried tomatoes from something else I made so Broccoli and Sun-Dried Tomato Meatballs were on the menu. I had never made meatballs with broccoli before but I liked them so much that I’ll be making them this weekend as part of the Superbowl menu. I’m going to set them out with some rolls and a side of marinara for dipping. I can’t wait!

Leftovers with a Twist
My Mom used to kind of throw everything that needed to be eaten from the week into a huge bowl of rice, scramble some eggs, throw in some soy sauce and call it her version of fried rice. It was honestly my favorite meal when she made this. I know it sounds odd but it was so delicious. I looked forward to fried rice made of leftovers. Well, now I do some form of this but with meatballs. I pretty much take what we need to use up and throw it into the Kitchen Aid, which is a game-changer in the kitchen by the way, and make some meatballs. I would do this with rice but I rarely eat it nowadays so we had to adjust the recipe a tad. It still works out really nicely.

During the weeks when I am super busy and I know it will be easier if I just meal prep some items, this is an easy one to have on hand. It’s so easy to make a side of pasta or a sandwich with these that they make it super convenient to have these on hand. I’ll even just eat these alone like little bite sized meatball poppers.

Broccoli and Sun-Dried Tomato Meatballs

Ingredients
1 lb ground beef of choice
1 egg
1 cup broccoli, finely chopped
4 tbsp sun-dried tomatoes
1/4 cup onion, finely chopped
2 tsp parmesan cheese
2 tbsp Progresso Italian Bread Crumbs
1 tsp italian seasoning
salt & pepper to taste
Instructions
- Preheat oven to 400° F
- In a medium to large bowl, mix all your ingredients until combined
- Using a 1 1/2 tbsp cookie dough scoop, scoop out approximately 16 meatballs
- Bake for 20 minutes or until cooked through
- Serve and enjoy!
