Have you ever heard of caakies or tried them? Yup! We hadn’t either until we had these cookies turn out more like cake. So, we dubbed them “caakies.” They didn’t turn out exactly how we expected but they were pretty good. They are soft, sweet, light, and for under 35 calories a piece they were pretty darn good! I’ve been snacking on these throughout the day and trying to figure out how to rework these so that they turn out more like cookies but for now…here ya go!

The best part about these is that they actually look like they’re gonna have that cookie texture but when you bite into them they are soft and kind of fluffy. I had some leftover white chocolate peppermint M&M’s so I put one in the center of each caakie and it added some color.
Can’t Go Wrong with M&M’s
I feel like everything that the MARS company puts out is usually pretty darn good. I really haven’t tried an M&M flavor that I didn’t like. Even the Candy Corn flavor is pretty good and I don’t like Candy Corn! I think it’s that fact that I taste more white chocolate than anything else. Either way, M&M’s are always a good topper. I like to use them when I’m baking to add some flavor and color or they’re great as a topping on ice cream or frozen yogurt. I think it’s the crunchy outside and chocolaty inside that does it for me. I’m also more of a classic M&M person rather than a peanut M&M lover. This is actually kind of odd for me because I am a huge fan of pretty much any nut butter so you’d think I’d go for the peanut M&M’s over the plain.

Healthy Cookies
These little cookies come in under 35 calories a piece, are packed with protein, are low carb, and low-fat. Each one has a good amount of fiber and they are packed with nutrients since the base is made from canned chickpeas.

Ingredients
1 15 oz can chickpeas, rinsed
1 scoop PEScience White Chocolate Mint
20 grams coconut flour
10 grams baking Stevia
1 tsp baking powder
20 grams Hershey’s Cocoa
2 eggs, beaten
6 oz Vanilla Unsweetened Almond Milk
~50 grams of White Chocolate Peppermint M&M’s, can add more if desired
Instructions

Preheat oven to 350 degrees

Place all ingredients except the M&M’s into food processor or blender and blend until smooth

Using a 1.5 Tbsp cookie dough scoop, scoop out approximately 27 cookies onto prepared baking sheet or silicone baking mat

Bake cookies for approximately 8 minutes

Let cool for 5 minutes and then gently press an M&M’s into the center of each cookie
