1 15 oz can chickpeas, rinsed

1 scoop PEScience White Chocolate Mint

20 grams coconut flour

10 grams baking Stevia

1 tsp baking powder

20 grams Hershey’s Cocoa

2 eggs, beaten

6 oz Vanilla Unsweetened Almond Milk

~50 grams of White Chocolate Peppermint M&M’s, can add more if desired



  1. Preheat oven to 350 degrees

  2. Place all ingredients except the M&M’s into food processor or blender and blend until smooth

  3. Using a 1.5 Tbsp cookie dough scoop, scoop out approximately 27 cookies onto prepared baking sheet or silicone baking mat

  4. Bake cookies for approximately 8 minutes

  5. Let cool for 5 minutes and then gently press an M&M’s into the center of each cookie

  6. Enjoy!


You can use whatever protein or candy you have available for these.
