Zucchini Carrot Cake Protein Donuts

A healthy spin on a delicious dessert. These Zucchini Carrot Cake Protein Donuts are a hit!



2 scoops Vanilla Protein Powder (I used Dymatize Whey)

20 grams coconut flour

60 grams unsweetened apple sauce

1 Dole 4 oz unsweetened pineapple tidbits, drained (single serve container)

1 tsp baking powder

1 tbsp baking stevia

140 grams egg whites

1/4th tsp salt

1 tsp cinnamon

100 grams carrots, shredded

100 grams zucchini, grated and drained


  1. Mix all dry ingredients in a medium bowl
  2. In a separate bowl mix all wet ingredients
  3. Combine wet and dry ingredients and mix well
  4. Add grated zucchini and carrots and mix until well combined
  5. In a prepared donut baking pan or silicone donut pan spread the batter evenly to make 6 donuts
  6. Bake at 350 for 30 minutes
  7. Let cool and enjoy!


This can be made into muffins or a loaf instead of donuts!
