Cauliflower and Carrot Mash

I love mashed potatoes just as much as the next person but most of the time it’s loaded with a ton of extra calories. This trimmed down version made of cauliflower and carrots is a fantastic alternative. My cauliflower and carrot mash is an excellent way to get your fix without any guilt! So easy to make, is awesome for meal prep, and is a crowd pleaser!

Healthy Alternative

This delicious alternative to regular mashed potatoes comes in at a little more than 50 calories per serving! Not only that but it’s highly nutritious as carrots are full of beta-carotene, fiber, and a ton of other vitamins and minerals. Carrots add a ton of flavor as well. I love having carrots on hand as they are a great snack, super filling, and go great with dip! Cauliflower is also high in fiber, low in calories, and basically just takes on the flavor of the carrots. Now throw in some seasoning, butter, salt and pepper, and you’ve got yourself a delicious side for your meal.

This dish adds a beautiful color to any meal and can be prepped ahead of time. I will often prepare it a day in advance and let the flavors marinate. It’s also a breeze to heat up which allows me more time to work on main dishes if needed. This is especially useful during holiday meal prepping when we have a ton of foods to prep and can often be overwhelming. It can easily be reheated on the stovetop, in the microwave, or even the oven. It’s the perfect side dish for any holiday party or potluck!

Cauliflower and Carrot Mash

A healthy and delicious alternative to regular mashed potatoes. This low calorie cauliflower and carrot mash is tasty, full of nutrients, and easy to make.

Ingredients

1 lb cauliflower, cut into florets

1 lb carrots, peeled and cut into 1-inch cubes

1/2 small onion

1 tsp garlic, minced

2 tbsp I Can’t Believe It’s Not Butter Light

1 tsp dried Oregano

1 tsp dried Rosemary

1 tsp onion powder

salt and pepper to taste

Instructions

  1. Steam cauliflower, carrots, and onion in a large pot of lightly salted water until they are soft and tender.
  2. Transfer steamed vegetables to a large bowl and mash together until well mixed (I used an immersion hand blender but a food processor, blender, or hand mixer will work as well)
  3. Add the rest of your ingredients and mix well
  4. Sprinkle a little more salt on top and enjoy!

Notes

If using an instant pot, use high pressure for 6 minutes to steam your veggies. Make sure you place a cup of water underneath.

Feel free to add any additional seasonings to the mixture
