Chai Spiced Oatmeal Cups

Does anyone else love chai spiced stuff as much as I do? I came across a sugar free Chai Tea Latte by Oregon Chai while I was at Target last week. I was so excited to try it because I hadn’t had Chai in so long. Well, this stuff does not disappoint. It is delicious! I decided that Chai Spiced Oatmeal Cups had to be added to the breakfast menu for this week. I took my base recipe, added some cauliflower for volume and added the Chai Tea Latte concentrate instead of milk. You can omit the cauliflower easily.

Easy Meal Prep

One of the things I love most about oatmeal is that it’s so easy to make, it’s filling, and it’s so versatile. It can be made sweet or savory and either way it’s awesome. It’s definitely a staple at my house and we can go through the Costco size pretty quickly here. Not sure if it’s my taste buds changing or what but I am loving oats more and more the older I get. I don’t remember being this fond of them when I was growing up. In fact, when that’s what my Mom prepped for us for breakfast I vividly remember thinking it was boring. It could also be that oatmeal has come a long way since then. Maybe if she’d made these Chai Spiced Baked Oatmeal Cups I wouldn’t have thought that. I’m kidding! Or am I?

Oatmeal Game Changer

Oatmeal has changed so much in the last few years. I see it all over my IG, Pinterest, Twitter, and Facebook. You name it and it’s there. So many different flavors, genius ideas on how to change it up, and scrumptious combinations. I mean really! So many great posts about it that it has my mind churning all the time about new ways to make it. It’s almost hard to  get sick of it because you can pretty much make it a different way every single time!

Chai Tea Latte

I’ll never forget the first time I had a Chai Tea Latte from The Coffee Bean. Oh my goodness, I was in absolute heaven. It was so delicious that I went from being a full on coffee drinker to all out tea latte lover. There’s just something so magical about Chai. Well, once I realized that those delicious drinks were loaded with calories (duh, no wonder they are so tasty) I had to put them on hold. Which is why I am so glad that I found this sugar free version. It’s sweetened with Splenda and tastes delicious as a tea latte as well. So make sure you pick some up and let me know what you think!

Chai Spiced Oatmeal Cups

Healthy Chai Spiced Oatmeal Cups made with sugar free Oregon Chai Tea Latte Black Tea. These little cups are packed full of flavor and smell amazing! If you’re a fan of Chai, then these are a must to make!

Ingredients

2 cups Quaker Oats

1 1/2 cups sugar free Oregon Chai Tea Latte concentrate

1/2 cup egg whites (can substitute 2 medium eggs)

1 tsp vanilla extract

1 tbsp cinnamon

Dash of salt

250 g riced cauliflower or zucchini (optional for volume oats)

Instructions

  1. Preheat oven to 350 and prepare muffin tins with liners or cooking spray
  2. Mix all the wet ingredients together
  3. Add the cauliflower or zucchini, if using, into the wet ingredients and mix well.
  4. In a separate bowl add your oats, cinnamon, and salt and mix well.
  5. Mix wet and dry ingredients together
  6. Evenly distribute into the muffin tins and bake for 30 minutes or until toothpick comes out clean.
  7. Let cool for at least 5 minutes and enjoy!

Notes

I like to sprinkle a little more cinnamon & salt on top of each muffin before putting them in the oven. You can definitely omit the cauliflower or zucchini but I like to add it occasionally because it fills me up and you really can’t taste it. I like the texture that it gives it as well.

You can always add some vanilla flavored protein powder if you’d like to make these protein packed.
