Having an oatmeal bake prepped and ready for week really makes having a good breakfast to eat when I’m pressed for time. It’s also super delicious so I look forward to it. There are so many variations and flavors you can make! This week I decided to make a Chocolate Covered Cherry Baked Oatmeal since it’s Valentines Day week. I figured I’d go along with the festivities and make a healthy breakfast out of it. Well, this did not disappoint! The cherries gave it a beautiful color and you can never go wrong with a chocolate drizzle.
This recipe is the same base as the regular oatmeal bake but I added some canned cherries to it. You can use fresh pitted cherries as well. I just happened to have a can leftover from when I was making brownies and thought it would go perfect!
Oatmeal bakes will usually last a few days in the house, depending on how many pieces I cut, but this one was gone in a day and a half. The boys loved it and had a few pieces and I decided to not only have it for breakfast but also for dessert. Luckily, I have plenty of oatmeal since I buy a huge box at Costco and will be making some more of this.

Chocolate Covered Cherry Baked Oatmeal
Sweet and delicious breakfast, snack or dessert. This Chocolate Covered Cherry Baked Oatmeal is filling and delicious.
2 cups Quaker Oats
1/2 cup liquid egg whites
1 tbsp chia seeds
1 1/2 cups almond milk (or milk of choice)
1 tbsp Madhava Better Baking Blend (or sweetener of choice)
1 cup fresh or canned cherries
1 tsp vanilla extract
2 tbsp Hershey’s Sugar Free Chocolate Syrup
- Preheat oven to 350
- In one bowl mix oats and chia seeds, and cherries
- Spread this mixture into an 8 x 8 baking dish or baking dish of choice
- Pour almond milk, egg whites, sweetener, and vanilla extract into shaker bottle and shake until everything is well mixed. You can also just whisk together in a bowl
- Pour the liquid mixture over the oats and bake at 350 for 40 minutes
- . Wait for it to cool and drizzle with chocolate syrup
I like to use the no sugar added canned cherries for my oatmeal bakes because they are soft and give the oatmeal some added sweetness.
