Chocolate Popcorn Cups

These little popcorn cups are sweet and salty all at the same time. They are delicious little snacks that can be made in small batches and stored in the freezer for times when you need a quick snack. I love making these because they are so easy and versatile. Sometimes I make them with kettle corn if I’m looking for something a little sweeter. If not, my usual butter popcorn works great! These chocolate popcorn cups take about 15 minutes to put together and are perfect for holiday parties.

Although there really isn’t much of a recipe because these are so simple, here are the basics.

I highly recommend investing in some silicone muffin liners if you haven’t already. They are pretty inexpensive, make clean up a breeze, and make taking these chocolate popcorn cups out of the liner so much easier. They come in all different shapes and sizes and really are worth spending the money on.

Melt one cup of your favorite chocolate chips with one tablespoon of coconut oil. I usually use either Nestle Milk Chocolate Chips or Lilly’s No Sugar Added Baking Chips. Both work great but if I am using the any type of no sugar added chocolate I will usually sweeten it a little more with liquid Stevia drops. I melt the chocolate chips with the coconut oil in the microwave in 30 second increments stirring well.

Once the chocolate has completely melted through I pour enough chocolate in muffin liners to coat the bottom. I then tilt the muffin liners so that the chocolate coats a little bit of the sides of each one.

Now you’re ready to fill your muffin liners with the popcorn. Fill each one with popcorn and then top with the remaining chocolate. Place the chocolate cups in the freezer for 30 minutes or until the chocolate has completely cooled and set. Once they’ve set I transfer the popcorn cups to a storage container or a Ziploc bag to keep them fresh.

Ingredients

1 cup chocolate chips (can also use a chocolate bar)

1 bag popcorn

1 tbsp coconut oil (optional)

Instructions

  1. Line muffin tin with silicone liners or regular muffin liners
  2. Pop your popcorn according to the instructions or you can also use pre-popped popcorn
  3. Melt chocolate and coconut oil (if using) in the microwave in 30 second increments stirring well between sessions. This usually takes about 2-3 times.
  4. Once chocolate is completely melted, coat the bottom of each liner with chocolate.
  5. Add desired amount of popcorn and top with more chocolate
  6. Continue doing this until all of your muffin liners are complete
  7. Freezer for at least 30 minutes and enjoy

Notes

You can use any type of chocolate or popcorn for these. I often will fill them with other items such as trail mix or cereal. They are a quick and delicious treat that kids and adults just seem to love. They’re a fun treat to have in the freezer for anytime.
