Crustless Turkey Pepperoni Quiche

If you all love pizza like I love pizza then you are going to love this recipe! This Crustless Turkey Pepperoni Quiche reminds me of having leftover pizza in the morning like I’ve done so many times in the past. The biggest difference is that it’s actually nutritious!

I’m that person that actually loves a good veggie pizza. Don’t knock me for saying this but Pizza Hut Veggie Lovers Pizza is one of my absolute favorites! I also just found this great Eat This, Not That! feature on their pizza. This pizza has made a ton of lists for healthier options when eating out. Yay for Veggie Lovers Pizza! There’s just something about the way that they make their vegetables that makes the difference for me. It’s like they are roasted in advance and that just gives them the best flavor! It’s similar to what I like to do with the vegetables prior to baking most things. I will either roast the vegetables in advance or just quickly saute them up to release the flavor and char the sides a bit. I like doing that because not only does it add to the flavor of the quiche but the charred veggies give it a bit of a pop with the colors. It’s not only delicious but also really nice to look at.

If you’re not into the veggies thing you can always add your favorite pizza toppings. I know my kids love The Meat Lovers Pizza so when I’m making something like that I throw in bacon, pepperoni, ham, sausage, and anything else I have on hand. If you know me then you already know that these will all be the leaner cuts of meat because although I know that fat is flavor, I still try to make it somewhat healthy. I don’t like serving up a huge plate full of fat.

This quiche can always be made with a crust, you’ll just have to follow the instructions on how to flash bake it prior to adding your egg mixture. So, let’s get to it. Gather all of your favorite pizza toppings and cheese and let’s put this quiche together. If you don’t have a crust available or don’t want to use one, you can always lay out some toast, bagels, english muffins, or breakfast potatoes on the side. They pair perfectly and you don’t have to worry about having a crust on hand.

Crustless Turkey Pepperoni Quiche

Pizza for breakfast! Need I say more?! This Crustless Turkey Pepperoni Quiche is a delicious, hearty breakfast that will have everyone wanting more.

Ingredients

3 large eggs

3 large egg whites or 138 grams liquid egg whites

1/2 cup milk of choice (I used unsweetened almond milk)

1/4 tbsp Italian seasonings

Salt & pepper to taste

100 grams broccoli, chopped

100 grams baby bell peppers, chopped

100 grams white or yellow onion, chopped

3 oz Trader Joe’s lite mozzarella cheese

1 oz Boars Head turkey pepperoni

Instructions

  1. Preheat oven to 350 degrees.
  2. Over medium heat saute broccoli, onions, and baby bell peppers until fragrant and translucent. When finished sauteing, set aside to cool.
  3. While vegetables are cooling whisk eggs, egg whites, milk, Italian seasonings, salt and pepper in a medium sized bowl. 
  4. When vegetable are cool, distribute evenly in a pie tin or baking dish. 
  5. Pour egg mixture over vegetables and bake at 350 degrees for 40-45 minutes or until eggs are cooked through and set.
  6. Once the eggs are set, remove from oven and top with pasta sauce, cheese, and turkey pepperoni. 
  7. Place quiche back in the oven for an additional 10-15 minutes or until the cheese has melted.

Notes

These are the vegetable I usually add to the quiche to give it some volume, flavor, and more density but you can use any vegetable that you would like or completely omit them.
