Easy Breakfast Poptarts

Mornings are pretty hectic around our house and breakfast, especially during the week, can be a tough one. I always keep a stash of microwavable breakfast sandwiches in the freezer but much prefer to give my family something a little more nutritious and satisfying. Not that the breakfast sandwiches are terrible but we keep those on hand as a last resort type of item. These easy breakfast poptarts can be made so many different ways that the possibilities are endless. Do you like sweet or savory for breakfast? Either way, you can fill the lavash bread with your favorite breakfast foods, wrap it up, and you’re ready to go.

Easy Breakfast Poptarts | Adapted Eats

I often prep a couple for the week and have them on hand for days I know I’ll be running around and need to grab something quick. It’s quick and easy to reheat them either in the microwave or toaster oven. I do much prefer the toaster oven to give it that crispy outside that I love so much but the microwave will do just fine. My boys love them too since they’re technically finger foods and who doesn’t love eating with their hands, am I right?

Easy Breakfast Poptarts

Are you looking for a delicious, protein packed, grab and go breakfast? Well, look no more! These delicious breakfast “poptarts” can be thrown together in under ten minutes and are perfect for meal prep as well.

Ingredients

1 serving Josephs Lavash Bread

1 egg, whisked

1 slice Columbus Hickory Smoked Turkey Bacon, chopped

1/2 Serving Velveeta Shreds

Instructions

  1. Lightly coat pan with cooking spray and cook bacon to desired wellness
  2. Add egg and cook through
  3. Place egg and bacon on one half of lavash bread and add cheese on top
  4. With your fingertips, lightly coat edges of lavash bread with water, fold in half, and press the edges together with a fork until the lavash bread is completely sealed on all sides
  5. Place frying pan on stove, on medium to high heat, lightly coat with cooking spray and cook poptart on each side for about 2 minutes or until crispy

Notes

These can be made with egg whites as well to cut down on fats and calories. Fill them with your favorite veggies, potatoes, and meats!
