When I’m really in the trenches these guys are my go to for meal prep. I take some fresh veggies, add either eggs or egg whites, and microwave them for a couple minutes. I can do 3-4 of these at a time and I’m set for busy mornings. These egg white breakfast cups go perfect between an English muffin, inside of a tortilla on between some toast.
The Filling

I usually use egg whites for my breakfast cups because it’s quicker than using eggs. There’s also less of a mess to clean up so it works great! This time around I used some onion, mushrooms, and baby bell peppers. Adding some fresh veggies to these makes them more filling and adds flavor.

I lightly spray my little plastic containers, which I found on Amazon.com, and then fill them with my veggies.

I use these little containers for all sorts of things. They are great to pack my snacks as well. They’re also very convenient when I send the kids off with them because even if they don’t bring them back, they weren’t very expensive and I have a ton of them. They’re pretty sturdy and last a really long time.

Once you’ve filled them with the ingredients you want, fill them with your egg whites or scrambled eggs.

Make sure to add some salt and your favorite seasoning for added flavor.

Pop them in the microwave for about 2 minutes and then let them cool. If you’re going to save them for meal prep items, wait until they are completely cooled off to put the lid on them. Once they’ve cooled down, put them in the fridge and just reheat them for 30 seconds once you’re ready to eat them.
