It’s that time of year where eggnog is making its rounds! I’m definitely one of those people that loves eggnog lattes, eggnog dessert, and pretty much everything eggnog. So you know that eggnog baked oats are a must around here! I took my regular baked oats recipe and substituted the almond milk with eggnog to make these Eggnog Baked Oats. If you like eggnog then you are going to love these.

Regular eggnog is so rich, creamy, and absolutely delicious. I usually mix it with some almond milk to make it last a little longer and save a little bit of calories for other holiday treats. I look forward to this time of year for many reasons. The holidays bring out some seasonal flavors that make baking so much fun! I recently found the Califia Farms Holiday Nog which has pretty much become my favorite low calorie eggnog. I’ve tried other brands and although they are tasty, they’re usually a little on the watery side. The Califia Farms Nog is still thick and creamy and at only 50 calories per half cup, it’s well worth it.

Baked oats are a staple around here because they’re an easy meal prep item. They easy to make and even easier to grab and go on busy mornings. So, this week we switched out the almond milk and substituted some Holiday Nog! I bake this in a 6 cup Pyrex dish and the serving size is just perfect. You can use a regular 8×8 baking dish as well. You can always double the recipe and make larger portions as well if you’re looking for something a little more filling. These are perfect snack sized oatmeal bars.
