I’ve been going through the Califia Farms holiday flavors like no tomorrow. Everything they put out is far better than most of their competitors. It’s just got a creamier, tastier feel to it. Some of the other brands taste bland and watered down. I was feeling some chia seed pudding the other morning and figured that it would be great with some fresh fruit. I had some strawberries that my Mom had brought over from the local farmers market which went perfect with it. So Gingersnap Chia Seed Pudding happened and I can’t wait to have it again tomorrow morning! My only regret was not having some gingersnaps from Trader Joe’s to pair with it!
Chia Seed Benefits
Chia seeds are small and mighty! Don’t let their small size let you think otherwise. Chia seeds are a great source for Omega-3 Fatty Acids, are rich in antioxidants, and are packed full of fiber, iron, and calcium. There are so many benefits to Chia seeds that they are hard to ignore. A little goes a long way with these. One of the coolest things about Chia seeds is that they can be used in place of eggs when cooking or baking. Chia seeds are widely used in Vegan recipes for this reason. Another great thing about them is that they are fairly inexpensive and they’ll last you a pretty decent amount of time as you just need a small amount usually to enjoy the benefits of them.
So, grab your ingredients and lets make some delicious Chia seed pudding! I used the Califia farms Gingersnap Latte Cold Brew as my base, added some vanilla extract, extra ginger, and a little bit of Maple Grove NSA syrup and some liquid Stevia drops. I let the Chia seeds plump up overnight from the liquid and enjoyed it the next day with some fresh strawberries. Sooooo good!!!Print
Gingersnap Chia Seed Pudding
Flavorful and festive Chia Seed pudding using Califia Farms Gingersnap Latte Cold Brew. Easy to make and packed full of health benefits!

4 tbsp Chia Seeds
1 cup Califia Farms Gingersnap Latte Cold Brew
1/2 tsp ground ginger
5 drops liquid Stevia, or to taste depending on how sweet you like it
1/2 tsp vanilla extract
1/4 cup Maple Grove Sugar Free Syrup
- Mix all your ingredients except the Chia seeds together in a small container that can be placed in the fridge.
- Add your Chia seeds and let sit overnight or until Chia seeds are plump
- Serve over oatmeal or your favorite fruit!
