Gingersnap Latte Kodiak Cake Muffins

Califia Farms is really just out here killing the game. They come out with the greatest flavors! I honestly can’t get enough of this Gingerbread Latte. Not only is it absolutely delicious but it’s also low in calories. It’s honestly just perfect on it’s own as an iced coffee. Much less calories than the Starbucks version. Well, I decided to make Gingersnap Latte Kodiak Cake Muffins using this stuff and it did not disappoint! In fact, it’s probably my new favorite flavor. When this is no longer available in stores because it’s a seasonal item, it’s going to be my mission to recreate this without the premade version.

Most of the year I have the luxury of being able to make most of my food fresh and at home because my schedule is very flexible. However, the beginning of the year is the complete opposite for me. I work for an accounting firm and during tax season we work almost everyday beginning February 1st all the way through the tax deadline. Sometimes people don’t believe how much we work but we work 7 days a week and 5 out of 7 of those are ten hour days. The first two weeks of tax season are by far the most grueling for me because it takes about that long for my body to become accustomed to the crazy hours. I try to get to the gym at least 5 days a week and I try to meal prep certain items so that I have food readily available.

Preparation is Key

The saying “Failing to Prepare is Preparing to Fail” really rings true during this time for me. For this reason I like to have some healthy options prepped and ready to go. Although I don’t prep all my meals, breakfast items are usually quick and easy to prep plus I’m busiest in the AM so breakfast can be really hard at times.

I am a sucker for most things gingerbread so these muffins were a favorite for me. These Gingersnap Latte Kodiak Cake Muffins totally hit the spot! They’re full of flavor, soft and moist on the inside, and keep me full. This is key for me because I don’t know when I’ll be able to sit down and actually have a meal so snack type items are a must. This recipe made 5 pretty decent sized muffins. You can also make a bunch of smaller ones if you want just a quick snack.

Gingersnap Latte Kodiak Cake Muffins

Healthy, hearty, and flavorful Gingersnap Latte Kodiak Cake Muffins using two of my favorite brands! These are great grab-n-go breakfast or snack options.

Ingredients

3/4th cup Power Cakes

1 tbsp I Can’t Believe It’s Not Butter Light

1/4th cup Maple Grove Sugar Free Pancake Syrup

1/4th cup Stevia in the Raw Baking Blend

1 tsp ground ginger

1 tsp salt

1 tsp baking soda

4 oz Califia Farms Gingersnap Latte Cold Brew Coffee

1/2 cup pumpkin puree

Instructions

  1. Preheat oven to 350 degrees
  2. Mix all wet ingredients in one bowl and all dry ingredients in another
  3. Mix wet ingredients with dry ingredients, mix until smooth
  4. Pour batter into prepared muffin tin
  5. Bake at 350 degrees for 15 minutes or until top of muffins are golden brown and toothpick comes out clean

Notes

This is the same base recipe that I used for the eggnog latte. You can use any flavor that you’d like by subbing out the flavor of either the milk or cold brew. You can also add anything you’d like to the muffins like nuts, chocolate chips, or bee pollen.
