Healthy Chicken Dobladas

Dobladas are essentially pan fried tacos typically filled with either some type of meat, beans, cheese, or combination of these. Since these are fried, they’re usually on the greasy, not so healthy side of things. One thing’s for sure, they are so good! They are crunchy, full of flavor, and leave you asking for seconds. These Healthy Chicken Dobladas do not disappoint and can be used as a meal or even a quick snack.
No matter what the dish, I usually try to put a healthier spin on things. Of course I allow myself to indulge in the authentic version of things occasionally! Who am I kidding, I’d be missing out on so many good things if I didn’t. These Healthy Chicken Dobladas are great for those nights when you need to throw a quick healthy meal together that everyone can enjoy.
Easy Shredded Chicken
OK, let’s start with the base which is pretty much some shredded chicken which can be made ahead of time. If you don’t have it prepped in advance, you can simply boil some chicken in a pot and shred it when ready. I found these great thin corn tortillas made by Mission that are perfect for these. One serving is three tortillas instead of the regular two tortillas.

For these healthy chicken dobladas I decided to use a green enchilada sauce that is low in fat and carbs but not in flavor. Make sure you check labels when purchasing your ingredients. Some items can be full of extra calories. The key to making sure that your tortillas to crack or break when you fold them is to microwave them until they are soft and then add the ingredients. I used 6 tortillas at a time and microwaved them for one minute before filling them with the chicken mixture. Portion the chicken mixture out between the 6 tortillas evenly and fold them over. Generously spray your frying pan with cooking spray and over low to medium heat pan fry each side of the tortilla until golden brown, approximately 2 minutes each side.

Serve warm with your favorite toppings. These are great with guacamole, sour cream, extra sauce, tomatoes, and onions.

Ingredients

1 cup pre-made shredded chicken breast, approximately 90 grams

1/4 cup low fat green enchilada sauce

6 thin corn tortillas

Instructions

1. In a medium size bowl, mix the chicken breast and enchilada sauce.

2. Warm all 6 tortillas in the microwave to soften them for easy folding.

3. Evenly distribute the chicken and enchilada mixture and fold tortillas over to make into tacos.

4. Heat your frying pan on low to medium heat and generously coat with cooking spray.

5. Pan fry each side of the dobladas for approximately 2-3 minutes or until brown on each side.

6. Serve warm with your favorite taco toppings.

Notes

Dobladas are best served right off the frying pan when they are warm and crispy but can be put into the oven, toaster oven, microwave, or air fryer for a quick reheat. Top them with sour cream, guacamole, fresh salsa, tomatoes, or onions.
