Healthy Pickle Meatloaf

If you’ve been following me for a while then you know I love pickles. For me, pickles and mustard are one of the ultimate combos. I’m a huge fan of Pickle Chicken and it’s one of my favorite things to make. So I decided to put a healthier spin on my regular meatloaf and thus, Healthy Pickle Meatloaf happened! It’s been a hit with my family and friends and makes a great potluck or easy dinner item. Preparation is a cinch and clean up is even easier.
Many recipes call for ketchup and brown sugar but for this particular recipe I used sweet gherkins and mustard instead. The sweetness from the gherkins replaces the sweetness that the brown sugar adds. This recipe is fairly simple and easy to make so let’s get cooking!
First thing’s first, let’s round up all of our ingredients. One of the best things about Healthy Pickle Meatloaf, or any meatloaf for that matter, is how easy it is. Meatloaf is the smaller version of sheet pan dinners. You put everything in a bowl, mix it all together, and put it in the baking dish. So, let’s add all of our ingredients together until everything is evenly mixed up and distributed.
Once you’ve got everything mixed together, transfer you mixture into your loaf pan. Don’t forget to line the bottom of the dish with parchment paper to make it easier to take the meatloaf out of the pan. This will work for so many baked meals or desserts.
Bake the meatloaf at 375° for 45 minutes or until cooked through. Let the meatloaf rest for about 10 minutes before serving so that it doesn’t fall apart.
Serve this recipe with your favorite sides and enjoy. We typically have mashed potatoes (or cauliflower mash), salad, and some veggies.

Healthy Pickle Meatloaf

A healthy and tasty spin on a classic meatloaf recipe!

Ingredients

1 lb package of Jennie-O Ground Turkey (I used 93/7 but can sub for any ground meat)

1/4 cup mustard

4 sweet gherkins, chopped

2 tbsp sweet gherkin pickle juice

100 grams small red onion (or one small onion)

1/4 cup Progresso Bread Crumbs

1 BBQ seasoning or seasoning of choice

1 egg

Instructions

1. Preheat oven to 350°

2. Beat egg in a small bowl and whisk in your pickle juice and mustard

3. Add your seasonings and pickles to the mixture and mix well.

4. Place the ground meat in a large bowl and add mix together with the wet ingredients.

5. Line a loaf pan with parchment paper on the bottom so that the meatloaf will be easy to get out of the pan once cooked.

6. Bake the meatloaf for 45 minutes at 350°

7. Let rest approximately 10 minutes and serve.

Notes

This meatloaf can be made with ground meat of your choice. I chose to use ground turkey because it was readily available but have made it with both ground beef and also ground pork. Both variations were delicious.

The recipe can easily be doubled up if cooking for a larger crowd.
