Healthy Pumpkin Meatloaf

I love all things pumpkin so when I heard that pumpkin meatloaf was a thing, of course I had to try it out! I checked out a few recipes, which all sounded delicious, and came up with this Healthy Pumpkin Meatloaf recipe. I’ve been making this simple Healthy Pumpkin Meatloaf recipe for a few years now and it’s always a crowd pleaser. 

Easy prep and clean up!

One of the things I love the most about meatloaf is how simple it is to put together. It really is a one bowl dish. Aside from chopping up some ingredients, it’s a quick dinner that takes almost no time. You can whip up this healthy pumpkin meatloaf and put it in the oven while you prep other items.

Typically, when I use any kind of ground meat, I like to combine lean ground meat and extra lean ground meat. For this particular recipe I used Jennie-O Lean ground turkey and Jennie-O Extra Lean ground turkey. I find that this ratio still comes out moist and delicious and the fat content on it works well.

As far as the base ingredients go, I added some diced up carrot, celery, onions, and of course pumpkin puree. Feel free to add anything additional that you think will work well with these flavors. Although it’s not included in this recipe, I do love adding zucchini to most of my meatloaf recipes. I feel that just like carrots and celery, it gives the meatloaf a nice flavor and some added moisture.

After you’ve got all  your ingredients diced, it’s basically just adding them to your bowl, throwing in the spices and seasonings, and mixing it all together. This is a great meal that anyone can enjoy and although there usually aren’t any leftovers, it goes great as a sandwich in case there are.

Hearty and healthy meatloaf with a pumpkin twist!

Ingredients

  • 1 lb extra lean ground turkey breast (99/1)
  • 1 lb ground turkey (93/7)
  • 100 grams onions, diced
  • 100 grams carrots, diced
  • 50 grams celery, diced
  • 1 cup pumpkin puree (240 grams)
  • 1 tsp minced garlic
  • 1 tbsp pumpkin spice
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp celery powder
  • 1/2 cup oats

Instructions

  1. Preheat oven to 375
  2. Mix all dry ingredients together and set aside
  3. Mix both ground meats together until well incorporated
  4. Add pumpkin, onions, carrots, celery, and garlic and mix together well.
  5. Add dry ingredients to meat and veggie mixture and mix well.
  6. Spray or grease your casserole dish or loaf pan and place mixture into pan
  7. Bake meatloaf for 45 minutes at 375 or until done
  8. Remove from oven and allow to cool for 15 minutes

Notes

Feel free to add or subtract your veggies of choice. This recipe can also be made into meatballs or burger patties.
