Healthy Pumpkin Meatloaf | Adapted Eats

Hearty and healthy meatloaf with a pumpkin twist!



  • 1 lb extra lean ground turkey breast (99/1)
  • 1 lb ground turkey (93/7)
  • 100 grams onions, diced
  • 100 grams carrots, diced
  • 50 grams celery, diced
  • 1 cup pumpkin puree (240 grams)
  • 1 tsp minced garlic
  • 1 tbsp pumpkin spice
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp celery powder
  • 1/2 cup oats


  1. Preheat oven to 375
  2. Mix all dry ingredients together and set aside
  3. Mix both ground meats together until well incorporated
  4. Add pumpkin, onions, carrots, celery, and garlic and mix together well.
  5. Add dry ingredients to meat and veggie mixture and mix well.
  6. Spray or grease your casserole dish or loaf pan and place mixture into pan
  7. Bake meatloaf for 45 minutes at 375 or until done
  8. Remove from oven and allow to cool for 15 minutes


Feel free to add or subtract your veggies of choice. This recipe can also be made into meatballs or burger patties.
