Anyone else just absolutely love a good bolognese sauce? I’m actually not a huge fan of pasta but I love Italian food. I can definitely appreciate some delicious meat sauce, chicken or eggplant Parmesan and so much more. This hearty bolognese sauce is loaded with veggies which bring such a great flavor into it. Trust me, your family will love this! The boys request it all the time because they like to put it over pasta, rice, or with a side of roasted potatoes. Either way, you can’t go wrong with it. I love taking the leftovers and putting it on some toast. Yum!

Hidden Veggies
Do you have picky eaters that don’t like to eat their veggies? Not a problem, this recipe is loaded with all sorts of veggies and the flavor is so good that they won’t even notice! Or at least they’ll dislike them a lot less than on their own. Honestly, all the veggies are what give this hearty bolognese sauce it’s delicious flavor so don’t skimp on them and feel free to add more!

Flavors, flavors, flavors!
My favorite thing about sauces, soups, and items like this is that when we have leftovers they’re even tastier. Giving the flavors more time to marinate with each other is always a plus. Plus, not having to throw another full meal together is always nice. As much as I’d love to make a tomato based sauce from scratch, I much prefer taking a jar and doctoring it up a bit. With so many great options out there it’s almost a no-brainer when it comes to saving time in the kitchen. Both Classico and Ragu have some great options and in my opinion are delicious! Not just that but they are decently priced options. I just can’t fathom the thought of shelling out ten bucks for a jar of tomatoes. I know, that’s just me though. Maybe one day!

Ingredients
1 lb 93/7 ground turkey (can sub for any ground meat)
1 1/2 cups Classico Roasted Garlic pasta sauce
1 14.5 oz can Hunt’s Fire Roasted Diced Tomatoes
1 small onion, chopped
1 8 oz package mushrooms, chopped
2 celery sticks, chopped
2 carrots, chopped
1 1/2 cups fresh or frozen spinach
1 tbsp garlic, minced
Salt & Pepper to taste
1 tsp each dried basil and oregano
Cooking Spray as needed or oil of choice
Instructions
- Heat pan over medium heat and coat with cooking spray
- Add chopped onion and stir until translucent. Add celery, onion, mushrooms, and carrots and cook an additional two minutes
- Add ground turkey, salt, pepper, garlic, and dried herbs
- Crumble meat with wooden spoon, stir well, and cook until meat is fully cooked
- Add pasta sauce and can of fire roasted tomatoes
- Let simmer stirring occasionally until reduced to a thick sauce consistency
- Serve over pasta or on rolls with a sprinkle of Parmesan cheese
Notes
You can make this sauce with pretty much any veggies you like. I will often add spinach if I have it available as well. Any ground meat can be used as well. The fattier the meat the more flavorful the sauce. I try to use a leaner meat to make the dish lower in fat and add veggies to make it burst with flavor
