This was a signature dish at my house when I was growing up. Like most hispanic families, Huevos con Salchicha was a favorite for us.
4 Trader Joe’s uncured chicken hot dogs, cut into pieces
8 eggs, scrambled
1 small tomato, diced
1/2 small onion, diced
1/2 tsp garlic, minced
1/4 cup almond milk
salt and pepper to taste
*Cheese and any additional toppings you’d like
This is the basic dish but you can add or subtract ingredients to your liking. It can also be made in a casserole dish and baked in the oven. I like to saute the hot dogs and onions before putting it in the casserole dish to give the dish some added flavor from caramelizing the onions with the hot dogs. You can also double or triple the amount depending on how much you’d like to make. My ratio is usually 1 hot dog for every two eggs but this can be done to your liking as well. This recipe can also be made with egg whites.
