Kodiak Cakes Banana Bread

Who else just loves banana bread? For me, it’s right up there with carrot cake. When I was little I didn’t think that these “healthy” foods could make something so delicious. Obviously I was very wrong. Banana bread and carrot cake are two of my favorite things. So whenever I have bananas that are too ripe I either freeze them for smoothies or make Kodiak Cakes Banana Bread! It’s the best way to make sure that I don’t waste any of them.

Easy Breakfast or Snack

Banana bread can be a great way to start your day. Grab a slice and a cup of your favorite coffee or tea and let’s go! Honestly, the toughest thing about making banana bread is letting it cool before I dive into it. You can tell when it’s close to being done because it makes the kitchen smell so good. When I take it out of the oven and check it to make sure it’s done I can just barely wait to slice it up so I can taste it!

Quick & Easy

Grab your ingredients and lets get to baking! Once you’ve got some bananas that are too ripe to eat on their own, grab your cinnamon, vanilla, sugar, and Kodiak Cakes mix. There are a ton of different ways to make banana bread so even if you don’t have this baking mix, you can definitely find a quick and easy recipe online with other ingredients.

Banana bread is really a one bowl item. You can put all of your ingredients into one bowl, mix it well, and pour it into your prepared baking tin. Wash your dishes while it’s baking and by the time it’s ready to be pulled out of the oven, your kitchen will be clean and you’ll be ready to enjoy this delicious bread.

Nuts, Chocolate, or Both?

How do you like your banana bread? Do you prefer yours with chocolate chips or walnuts? I like all types of banana bread and I definitely to not discriminate. Luckily I don’t have any type of nut allergy so banana bread with walnuts in it is always a plus. My banana bread, because it’s usually not planned, will be made with whatever I have on hand. So, if I have nuts or chocolate chips on hand then I’ll throw some of those into the mix. If I don’t have any of those items, the banana bread is still just as delicious. You can’t go wrong with it. It’s soft, moist, tasty, and satisfying no matter what.

Kodiak Cakes Banana Bread

The smell of this bread alone makes it irresistible. It’s full of cinnamon and sugar deliciousness and the bananas make it so moist and flavorful. Grab a cup of coffee and enjoy a slice with your favorite cup of coffee.

Ingredients

4 overripe bananas

1/4 cup almond milk

1 tsp cinnamon

2 tbsp unsweetened applesauce

1/4 Madhava Better Baking Blend (or sweetener of choice)

1/4 tsp salt

2 cups Kodiak Cakes Pumpkin Flax Energy Cakes

Instructions

  1. Preheat oven to 350 degrees and prepare your loaf pan
  2. Mash your bananas well and set aside for later
  3. Combine your wet ingredients in one bowl and mix together until smooth
  4. Add your dry ingredients to the wet ingredients and mix well
  5. Add your mashed bananas and mix well
  6. Pour batter into pre-lined or pre-prepared loaf pan and bake at 350 degrees for 25 minutes or until toothpick inserted in the center of the loaf comes out clean
  7. Let cool, slice, serve, and enjoy!

      My guess is about 4 days but to be honest it flies off the counter within 2 at most around here!

    1/4th of what for sugar? Cups? And is it equal parts

      Hi Emily, I used Madhava Better Baking Blend when I wrote up that recipe. It is a coconut and cane sugar blend, but it seems as though they don’t make that sweetener anymore. You can use 1/4th cup of any sweetener you prefer. Thanks so much for the question.
