Low Carb Pita McGriddle

Who doesn’t love a McGriddle, right! Sausage, eggs, and cheese packed between two pancake like rolls is delicious already! Not sure who the genius that thought of adding the maple flavor was but I applaud them! Well, me being me, I can’t afford to go to McDonald’s everyday for this delicious breakfast so I’ve been making my own version at home lately. This low carb pita McGriddle will surely satiate your taste buds!

Breakfast of Champions!

It’s super simple and only takes a few minutes to make. You can even make it ahead of time and just quickly reheat it in the microwave when you’re ready to eat. So, here’s pretty much what you need but make adjustments as necessary to your dietary needs or for what you have available. OK, let’s get these low carb pita McGriddles started!

Microwaved Eggs

The microwave is my best friend when I’m prepping these in the morning. Or the night before even! I have this great microwave safe Omelet Maker that I think I bought at either Walmart or Target but can’t remember to be honest. You can also find it on Amazon, it’s not very expensive, and it makes prep and clean up a breeze.

Although it’s a non-stick surface, I lightly spray the side that I pour the egg whites and eggs in. I pour my egg whites in first and then crack my egg in next. Once I’ve done that, I sprinkle a little bit of salt on top and mix the egg in with the egg whites. I don’t like to mix it too much because I like having the yolk just slightly mixed rather than thoroughly scrambled in.

Next I pour in a little bit of maple syrup into the egg mixture and add my sausage give it a little more sweetness. I love that sweet and salty combo!

This is where you add in any meats you might like. I usually try to pair this with some type of maple flavored sausage but I have also done this with bacon, ham, regular sausage, or just omitted the meat if I didn’t have any. Pop this in the microwave for no more than 2 minutes unless you like your eggs extremely done. Average time for this is 1 3/4-2 minutes depending on the amount of egg whites added in.

While the egg and sausage mixture is cooking in the microwave, over medium to high heat, place your pita on the pan. You don’t need to spray it or add any oil to it as it won’t stick to the pan. Place your slice of cheese on top and allow it to melt. Don’t worry about needing to have it melt completely because it will melt even more when you place the hot eggs on top.

Once your eggs are ready, take them out of the microwave safe dish and place it over the cheese and pita like shown in the picture below.

Fold your pita bread in half and crisp the sides to your liking. I like to cut mine in half and dip it in a little more syrup as I eat it.

This low carb pita McGriddle comes in at 258 calories which is much less than the 420 that a regular McGriddle contains. It is made up of 13 g of carbs, 11 g of fat, and 28 grams of protein if made with the same ingredients that I used. I’d say that’s a definite win!
