Protein Carrot Cake Bars

What do you do when you have a ton of carrots to use up? You make some delicious protein carrot cake bars!! These were so good that I pretty much had to whip up a second batch the very next day. Well, you bet these are going to be on repeat for a while because they were so good. I added a drizzle of my low calorie icing to these and they were just perfect.

Best Grater Ever!

I recently purchased this little grater on Amazon.com which is really where the inspiration for making carrot cake anything came from. I had purchased something similar , less expensive version prior to getting this one. It’s great but if you’re going to get one, I recommend spending a little more for the better quality grater. This little contraption is labeled as a “Mandolin Slicer, Cutter, Chopper, and Grater” and it does all of that and more. Clean up is easy with this thing and it also stores nicely with most of the items fitting right in the main compartment. Everyone that has used this thing has asked me where I purchased it because they want to get their hands on one too! Honestly, I don’t need anymore kitchen contraptions but this little guy is a game changer.

Breakfast Bars or Dessert?

I missed out on carrot cake for years thinking it would never be as good as chocolate anything. Obviously I was wrong and after trying it have always opted for it. I mean really, who would have thought carrot cake could be so good?! Well, if you’ve been following me for a while then you know I have a massive sweet tooth. The best thing about these bars is that they taste like dessert without all of the calories. I like to have these as a pre-gym snack, on the run breakfast, or a quick fix for dessert. For under 100 calories each, they’re perfect for any time of the day. I’m telling you, these protein carrot cake bars really hit the spot.

Icing

I’ve been topping these with a low calorie icing that just makes them even tastier. The icing is basically made of egg whites, sugar free Jell-O pudding mix and liquid Stevia. It takes just a couple minutes to make and adds so much visually and taste wise. When I make these at home I leave have with icing and half without. The main reason is that sometimes I pack these with me to take to work. When throwing them in a Ziploc bag the frosting just gets all over the place so I just take them without it and they’re still just as delicious!

Protein Carrot Cake Bars

Ingredients

70 g Dymatize ISO 100 Gourmet Vanilla

32 g coconut flour

15 g baking Stevia

1 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp ground ginger

1/2 tsp salt

125 g finely grated carrots

111 g (1/2 cup) unsweetened apple sauce

60 mL unsweetened almond milk

1 tsp vanilla extract

230 g liquid egg whites

60 mL Walden Farms Maple Syrup

1 large egg

Instructions

  1. Pre-heat oven to 350 degrees.
  2. In a medium sized bowl add the protein powder, coconut flour, baking Stevia, baking powder, baking soda, cinnamon, nutmeg, ground ginger, and salt. Mix together until everything is well incorporated.
  3. In a large bowl add the carrots, unsweetened apple sauce, unsweetened almond milk, vanilla extract, egg whites, maple syrup, and egg. Mix until everything is well incorporated and smooth.
  4. Add your dry ingredients to the wet ingredients and mix until you have a nice, smooth batter.
  5. Pour batter into a prepared 8×8 baking dish. Bake at 350 degrees for 40-45 minutes.
  6. Remove from oven and let cool. Cut into 8 even bars and enjoy! 

Notes

You can substitute the Walden Farms Maple Syrup for the maple syrup of your choice but it will change the nutrition information.
