Skinny Chicken Gnocchi Soup

Alright, it’s story time! Many moons ago I used to work at Olive Garden. I absolutely loved all of the soups they had, especially on a cold day. The Chicken Gnocchi Soup was one of my all time favorites, probably because it’s so rich and creamy. Back then I did so much walking to and from the kitchen to my tables that I could literally eat anything and it was tough for me to gain weight. Now that I have a job where I’m sitting most of the day, that’s no longer the case. So, I came up with my own version and made a Skinny Chicken Gnocchi Soup!

It took a few attempts but I finally think I got a pretty decent copycat soup of the Olive Garden original. I must say, it’s pretty tasty and I could probably eat the entire pot of soup! I used Flax milk and butter to make the soup creamy and the cauliflower gnocchi from Trader Joe’s to cut down on some calories. When I make the Trader Joe’s gnocchi I like to microwave it for 30 seconds before I saute it on the pan. Although gnocchi is supposed to be soft and chewy, I like the way they taste when they are crispy. I did the same thing for them even though I added them to the soup. I brown them on all sides and it adds a nice color to the soup as well. If you don’t eat it right away it does get soft from being in the soup.

My Healthy Chicken Gnocchi Soup was quick and easy to put together and was perfect for these chilly nights. It’s been raining here in California the last few days so this was much needed.

Although the ingredient list is kind of long, it’s totally worth it. To make it even easier you can buy the carrots already shredded so you don’t have to take the time to prepare them.

Ingredients

1 lb chicken breast, diced and cooked

1 package Trader Joe’s Cauliflower Gnocchi

2 cups chicken broth

2 cups flax milk

1/2 cup non fat half & half

2 carrots, chopped or shredded

2 celery stalks, chopped

1/2 small onion, chopped

2 garlic cloves, minced

2 tbsp I Can’t Believe It’s Not Butter

2 cups fresh spinach

1 tsp salt

1/2 tsp pepper

1 tsp thyme, fresh or dried

Instructions

  1. Over medium heat, saute onions, celery, and carrots until onions become translucent then add the minced garlic and saute for another minute
  2. Add chicken broth, flax milk, and half and half, and butter and bring to a boil. 
  3. Add your salt, pepper, thyme, and any other seasonings you’d like
  4. Add your precooked chicken, gnocchi, and spinach to the soup and bring to a boil once more
  5. Serve and Enjoy!

      Trader Joe’s is definitely one of my favorite places to shop! They have great options that I seriously can’t find anywhere else. I hope they open one in your area soon too!
