I’ve been making mug cakes for years, some far better than others, that’s for sure. If you’ve ever made a protein mug cake then I’m sure you can relate when I tell you some have been absolutely awful. Well, not only do I have a great recipe for a mug cake but I’ve also got a great tip on how to keep them from drying out. The key to a moist mug cake, besides a great recipe, is this Campbell’s Soup Micro Cup! It keeps the mug cake from drying out and perfectly cooks it through.
Mug Cake Galore!
This mug cake recipe is low in calories but not in flavor. You can add all your favorite toppings or eat it plain. Either way, it will be sure to satisfy your sweet tooth.
For this particular mug cake I used a little PB2 to make a frosting. Just add a little water, milk, or syrup until you get the frosting consistency you like and enjoy!
This little trick all came about by a fluke! Sometimes great things just happen! Last year I went to a wedding out in Texas and the hotel I stayed at had a mini kitchen which was fantastic. I was not only able to stay somewhat on track with my healthy eating habits but I also saved a ton of money. After getting all settled in, I went to the local Walmart and picked up a few items to have at the hotel. While I was there I saw this little Micro-Cup that Campbell’s Soup makes and thought it’d be great for not only the things I needed to heat up but also for storage since I could easily just put the lid on and throw it in the fridge.
Well, the second night I wanted to make a mug cake but realized I really didn’t have anything to make it in. Then I remembered I had this little guy in my stuff and went ahead and made my mug cake in it. Well, game changed! My mug cake came out better than it had ever before and I was hooked! I’ve been making my mug cakes in it ever since and have pretty much gotten everyone I know on the bandwagon. Now that you’ve got the key to a moist mug cake, try it out and let me know what you think.
