Veggie Loaded Burger Patties

What’s the best way to get children, or adults for that matter, to eat their veggies? Pack their burger patties full of them and don’t tell them. They’ll think they’re just having one of the best burgers of their lives but at the same time they’ll be getting a solid serving of fiber and veggies. These Veggie Loaded Burger Patties are always a hit in my home and I feel good about what I’m putting on the table. The veggies add a ton of flavor to the meat, make them super moist and delicious, and add a ton of volume to keep even the hungriest of eaters full.

I was raised in a household where my Mom made sure we had a healthy home cooked meal on the table. It was a rarity that we either ate out or had fast food. In fact, even going out for fast food was a treat for us. Getting a Happy Meal from McDonalds was like winning the lotto for me when I was younger. I remember thinking how lucky my friends were because they ate out all the time with their families. Pizza night, Taco Bell, burgers from McDonalds or Burger King. Now that I’m all grown up and a Mother myself, I’m beyond grateful to my Mom for taking the time to feed us healthy meals. Even though she didn’t like to cook, she took the time and made everything with love. Not only did we always have food on the table but she made sure we were fully stocked with healthy snacks. You don’t notice or appreciate these things as a kid. You might even hate them but looking back, I’m happy that I was raised that way.

Four Favorites

There are four items that I always have on hand in the refrigerator. I call them my four favorite because the four of them together (or separate) add a ton of flavor to pretty much any meal. They are zucchini, carrots, mushrooms and onions. I can add so much flavor to almost any meal with these four. At the very least, they make a great side dish and are easy to prep. It’s a win, win situation. One of the greatest thing about carrots and zucchini is that you can use them in a variation of ways whether it’s making them sweet or savory. The mushrooms and onions, well not so much but they are great to have on hand.

My other go to vegetables are sweet baby bell peppers or regular bell peppers. As far as regular bell peppers go, the red, yellow, and orange or my absolute favorite. The green ones are tasty as well but the others have a much better flavor in my taste bud opinion.

Sauces

If you’ve never tried the G Hughes line of sugar free sauces and marinades, I suggest you check them out. They recently came out with a ton of new items to accompany their sugar free BBQ and everything I have tried so far has been fantastic. As of right now the only place I can find them at is Walmart. Thank goodness one opened up near me and I don’t have to go far to pick them up. Walmart also carries my favorite tortillas and pita bread!

Veggie Loaded Burger Patties

Delicious and nutritious veggie loaded burger patties that are full of flavor!

Ingredients

1 lb extra lean ground chicken or turkey

1 cup shredded zucchini, drained

1 cup shredded carrots

1 cup minced mushrooms

1/2 cup onion, diced

1 tbsp minced garlic

2 tbsp G Hughes Sugar Free BBQ Sauce

1/2 tsp salt

1/2 tsp pepper

1/2 tbsp red pepper flakes, optional

Instructions

  1. In a large bowl, mix together the zucchini, carrots, mushrooms, onions, and garlic.
  2. Add your ground meat to the mixture along with the BBQ sauce, salt, pepper, and red pepper flakes. Mix well making sure that everything is well incorporated.
  3. Divide your meat mixture into 5 portions and form them into approximately 1/2 inch thick patties.
  4. Grill patties covered about 4-5 minutes each side or until meat is cooked through. If using beef, cook to preferred doneness. 
  5. Serve with on your favorite buns along with your favorite condiments and toppings!

Notes

***For baked burgers, preheat the oven to 350 and bake for 20 minutes.

***For burgers cooked on the pan, 4-5 minutes each side covered over medium to high heat.
