I love this bowl for so many different reasons besides the fact that it’s absolutely delicious. I guess we are throwing something else into the mix instead of just waffles and pancakes because pancake bowls are definitely a thing. This zucchini protein pancake bowl is my go to when I make a pancake bowl because I have the ingredients on hand pretty much all of the time.
I can make this breakfast in under 5 minutes, take it to go, or eat it on the spot. I sometimes make a couple of these at a time so that I have them ready for days when I know I am going to be limited on time. The best thing about these is that you can make them into all sort of flavors, you just have to get creative.

Zucchini Protein Pancake Bowl Base Recipe
This recipe is the base that I use for these and even on its own, it’s pretty delicious. Besides that it’s filling, it’s high in protein, and can even be eaten as a snack!
All you need is your favorite protein pancake mix, a little sweetener, and zucchini for volume. If you’ve never added zucchini or cauliflower to some of your meals for volume, trust me, you can’t taste it. I love using either one of these to add volume to my foods because I have a huge appetite and they take on whichever flavor you put them in. Also, a little extra fiber is always a good thing.

Protein Pancake Mix
I have tried a few different types but my current favorites are Trader Joe’s Buttermilk Protein Pancake Mix, Pamcakes Buttermilk Pancake Mix, and Birch Benders Protein Pancake Mix. The Trader Joe’s pancake mix is a little on the bland side but for the price, that’s nothing that some cinnamon, Sweet Drops, or other sweetener can’t fix. It’s definitely the most bang for your buck. Any pancake mix will do, it doesn’t have to be a protein blend but that’s what I usually use and what I prefer.



Another thing I noticed about microwaving the pancake mix is that it becomes much bigger than when I bake it or make it on the pan. So, it’s much more voluminous than making it the conventional way.

Ingredients
20 g Trader Joe’s Buttermilk Protein Pancake Mix
20 g Pamcakes Buttermilk Protein Pancake Mix
1/4th tsp cinnamon
dash of salt
1/4th cup of water
Sweet Drops to taste
100 g of zucchini
Instructions
- Mix the Trader Joe’s Pancake Mix, Pamcakes Pancake Mix, cinnamon, and salt until well incorporated.
- Add the water and Sweet drops to the dry mixture and mix until you have a thick batter consistency.
- Add the zucchini (if using) to the mixture and make sure it’s all well coated with the pancake batter.
- Microwave for 2 minutes on high, add your favorite toppings, and enjoy!
Notes
The zucchini is optional but great for volume. It also adds a little fiber to your diet which is just an added bonus. If you don’t like using protein pancake mix, any “just add water” mix works just fine. I have never tried making these with pancake mix made from scratch but if you have, please let me know how it works out.
